healthy lemon cheesecake cups

I love these little cheesecake cups, and they are always a huge hit. They are so light, fresh and perfectly portioned. The best part, these cheesecake cups don't come with the normal calories a piece of cheesecake does!






This recipe comes from my favorite recipe source skinny taste:

ingredients:
12 reduced fat vanilla wafers
8 oz 1/3 less fat cream cheese, softened
1/4 c. sugar
1 tsp vanilla
6 oz fat-free vanilla Greek yogurt
2 large egg whites (I LOVE my egg separator, so so easy)
3 tbsp lemon juice
1 tbsp lemon zest
1 tbsp flour
fresh blackberries

directions:
preheat oven to 350ยบ
beat cream cheese, sugar, and vanilla until smooth
gradually beat in yogurt, egg whites, lemon juice, lemon zest, and flour - don't over beat
place wafers at the bottom of each liner
fill liners with batter
bake for 25 min.
cool to room temperature
refrigerate for a few hours
top with fresh blackberries and powdered sugar

To make these for Valentine's day, use pink or red liners and switch the blackberries for raspberries or strawberries. Enjoy! :)
